Huli Huli Chicken with Grilled Broccoli and Rice

Ingredients

  • 1 Chicken, cut 8 piece
  • 1 c Pineapple Juice
  • 1/3 c Soy Sauce
  • 1/3 c Brown Sugar
  • 1/3 c Ketchup
  • 1/2 c Chicken Stock
  • 1 each 2 inch Ginger, peeled and chopped fine
  • 5 each cloves Garlic, chopped fine
  • 1 ea Bag Fresh Broccoli Flowerets
  • 1 Box White Rice
  • Olive Oil
  • Salt
  • Pepper

Instructions

Big Green Egg Set-up:ย 

Direct 350 degrees, Cooking Grate Stainless or Cast Iron, BGE Perforated half grid pan

Tips:ย  Make sure grates are cleanย 

ย 

TOOLS & ACCESSORIES RECOMMENDED:ย ย 

Tongs, Instant Read thermometerย 

ย For the Rice:ย 

ย 1. 4 c Cooked Rice โ€“ Cook According to instructionsย 

ย 

For the Broccoli:ย 

4 c Broccoliย 

Olive oilย 

Salt and Pepperย 

ย 1. Lightly coat the broccoli with olive oil and dust with salt and pepper.ย 

ย 2. Add to the BGE perforated half grid and grill until you see some grill color and removeย 

ย 

Chickenย 

ย 1. Mix all the ingredients together in a bowlย 

ย 2. Pour the mixture over the chicken and allow to marinate over nightย 

ย 3. When ready, Fire up the Egg, ideal temperature 350ย 

ย 4. Place the chicken on the grates and close that lidย 

ย 5. After about 8-10 minutes, turn your chicken – You will have some caramelization and colorย 

ย Chicken has to be 165 degrees no matter, use The Big Green Egg Instant Read Thermometerโ€ฏto confirm temperatureย 

ย 

BIG GREEN EGG TIP:

Take the Huli Huli marinade, add to a small sauce pan and BOIL it.ย  It must boil!ย  You can then use this as a sauce to add right at the end of cooking to give another layer of flavor.ย
