It's time for the fun part - let's get cooking! When adding charcoal to your Big Green Egg, the best rule of thumb is to stop 2 inches below the rim of the Fire Ring for the right amount of clearance.

Temperature Control
Every time you fire up your Big Green Egg, remember, your rEGGulator Cap and Draft Door work in tandem to regulate the temperature. Simply put, opening your vents will make your temperature go up. Closing them will cause your temperature to go down.

To fill your EGG, we recommend using Big Green Egg Lump Charcoal, made from a selection of 100% hardwoods.

Lighting
Simply fill your Egg with 100% natural lump charcoal, light it, and watch as your Egg gets to cooking temperature. And within just a few quick minutes, you're ready to get grilling, roasting, or smoking. It’s almost too easy.

Relighting
Remove any leftover ash from your last cook by lifting the lid of your Egg, raking the coals, and then opening the Draft Door to scoop out the ash. Then just add new charcoal and light it like always. Too easy.

Burping
Prevent flareups and allow air to slowly enter your Egg. Always open with caution, by bouncing the lid for a few seconds (the classic burp) for smoke and heat to escape. Now, you can safely, and completely, lift the lid.
