Morro Bay BBQ Cowboy Oysters

Ingredients

  • 6 Morro Bay Jumbo Oysters, washed well
  • ¼ lb butter
  • 1 large shallot
  • A “good splash” of bourbon
  • 2 teaspoons your favorite BBQ spice
  • Lemon
  • ½ bunch chives, sliced

Instructions

Fire up the Big Green Egg for direct cooking at 400°F/204°C. In a small saucepot, sauté shallots in a bit of butter. Add BBQ spice and then flambé with bourbon. Add a squeeze of lemon and then reserve sauce for when the oysters open.
Place oysters on grill with the cup of the oyster flame side down. Put lid down and cook until they just pop open, about 5 minutes. When oysters open and they will stick to the top shell, shuck then into your bourbon pan sauce. Add a little of the oyster liqueur as well. Take a pair of kitchen scissors and cut the oysters in half or into bite size pieces. Place oysters back into the bottom shell and when ready re-fire on the Big Green Egg
Garnish with sliced chives, a pinch of BBQ spice and a little something crispy!
