Tips for Using Your Cooler as a Resting Bag:
Liner protection: Double wrap your meat tightly in butcher paper or foil, then place in a leak-proof container or bag before placing it in the cooler to protect the M30's interior liner from the hot meat and grease that can cause damage.
Hold temperatures steady: Use towels to fill any empty space or air pockets to help stabilize and hold temperatures.
Food safety: Ensure the internal temperature of your protein stays above 140°F (60°C) for food safety.
Residual Smell: Smoke and grease can leave a lingering scent and oil residue in soft cooler liners. Using a "sacrificial" towel or an open plastic bag inside the towels can help catch leaks and odors.
Bark Integrity: While coolers are great for tenderness, the trapped steam can sometimes soften the brisket's "bark." If you prefer a crunchier exterior, consider resting it on the counter until it hits 170-180°F (76-82°C) before moving it to the cooler
Orientation Matters: Lay the cooler on its side so the brisket rests flat. This helps keep the meat supported and juices evenly distributed during the rest.
