Grilled Summer Salad

This refreshing salad features grilled tomatoes and cucumbers, creating a delicious blend of smoky and fresh flavors. It’s the perfect light and healthy side for any summer meal.

Ingredients

  • 5 ea Red Tomatoes
  • 1 ea Vidalia or Sweet Onion, peeled and cut in half
  • 1 ea Cucumber
  • 4 ea Corn on the Cob, Shucked
  • ¾ Cup Olive Oil
  • ¾ Cup Apple Cider Vinegar
  • 2 T Oregano, Fresh Chopped
  • 1 T Salt
  • 1 T Black Pepper

Instructions

EGG SET-UP:  Direct Frill 350 degree plus with rack 

TOOLS & ACCESSORIES RECOMMENDED:  Large bowl that will hold all ingredients Tongs, Cutting Board, Chef Knife 

 

 1. Place corn on grill and allow to get color 

 2. Cut onion in half and also place on the grill  

 3. Cut the tomatoes into wedges and place in a large bowl 

 4. Slice Cucumbers, adding to bowl 

 5. In a bowl add, the apple cider vinegar, oil, oregano, salt and pepper and mix well.  ** this can be done in a deli container that will allow you to shake, or place in a blender ** 

 6. Pull corn and onion off the grill and cut, adding to the bowl. 

 7. Add Vinaigrette and mix thoroughly.  Place in the refrigerator to cool and serve!
