Waygu Bratwurst with Peppers, Onions and Slaw

  • 4-6 KOW waygu bratwurst
  • 4-6 mini sweet peppers
  • 1 jalapeño pepper
  • ½ red onion, diced
  • 2 scallions, thinly sliced
  • Ready made coleslaw mix
  • 1 tsp red wine vinegar
  • 1/3 cup mayonnaise
  • Green curly lettuce to garnish
  • Olive oil
  • Mustard
  • 6 buns


Set the EGG for direct cooking without a convEGGtor at 400°F/204ºC.

Lightly coat the sweet peppers and jalapeño pepper with olive oil and roast until slightly charred. Once cool, slice into thin pieces to garnish the hot dogs.

For the coleslaw, add ready-made coleslaw mix with the mayonnaise and red wine vinegar in a mixing bowl and whisk together until fully combined.

Place the bratwurst on the EGG and grill for 5 minutes on each side. Place the buns on the grill and cook until toasted. Remove the hotdogs and buns from the grill; top with roasted peppers, scallions, red onion, mustard, and coleslaw, and top with curly lettuce.
