Make a classic Swiss rosti with bacon and fried egg on the Big Green Egg Cast Iron Plancha. This simple, satisfying Big Green Egg side dish recipe uses grated boiled potatoes and diced bacon, cooked at 180°C / 356°F until deeply golden and crispy on both sides, then topped with a fried egg. The Cast Iron Plancha gives the rosti an even, professional sear you can't replicate on a stovetop. Proof that the best Big Green Egg recipes are sometimes the simplest ones.

4–6 medium Waxy potatoes, boiled, cooled and peeled
100–150g (3.5–5 oz) Bacon, diced
To taste - Salt and pepper
2–4 Eggs (for frying, one per serving)
Butter or oil (for the Plancha)
Cast Iron Plancha
Set up the Big Green Egg with the Cast Iron Plancha. Target temperature: 180°C / 356°F.
Peel and grate the boiled, cooled potatoes into a bowl.
Add the diced bacon and season with salt and pepper.
Mix everything together until well combined.
Grease the Cast Iron Plancha with a little butter or oil.
Spread the rosti mixture approximately 2 fingers thick (about 3–4cm / 1.5 inches) across the plancha.
Cook at 180°C / 356°F until the underside is golden and crispy, then carefully flip and cook the other side until equally golden.
Fry an egg separately on the plancha alongside the rosti.
Serve the rosti topped with a fried egg. Season with a final crack of pepper.
