Grilled Vegetable Lasagna

Ingredients

  • 12 lasagna noodles, cooked
  • 1 zucchini, sliced
  • 1 bell pepper, sliced
  • 1 eggplant, sliced
  • 2 cups ricotta cheese
  • 1/2 cup Parmesan cheese
  • 2 cups marinara sauce
  • 1 tbsp olive oil
  • 1/2 tsp black pepper

Instructions

Method: Indirect baking

  1. Set the EGG for indirect cooking at 375°F/190°C.
  2. Grill vegetables for 3-4 minutes per side.
  3. Layer cooked noodles, ricotta, grilled veggies, and marinara in a baking dish.
  4. Top with Parmesan and bake for 30 minutes.
