- 4 grouper fillets
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1/4 cup fresh basil, chopped
- 1/2 tsp red pepper flakes
- 1 tbsp lemon juice
Instructions
Method: Direct grilling
- Set the EGG for direct cooking at 400°F/204°C.
- Rub grouper fillets with olive oil, salt, and pepper.
- Grill fillets for 3-4 minutes per side.
- In a saucepan, heat garlic, diced tomatoes, basil, red pepper flakes, and lemon juice.
- Simmer for 5 minutes and spoon over grilled grouper before serving.
