Ingredients
- 4 NY Strip steaks, seasoned with 4 tbsp Dizzy Gourmet® Cosmic Cow Seasoning™
Mushroom Whiskey Cream Sauce Ingredients
- 1 Tablespoon unsalted butter
- ¼ cup mushrooms, cut into bite size pieces
- ¼ cup chopped leeks
- 1 clove garlic, minced
- ½ cup whiskey
- 2 cups heavy cream
- â…› teaspoon cayenne pepper
- Salt and pepper
Instructions
Set the EGG for direct cooking (without the convEGGtor) with a Cast Iron Grid at 650°F/343°C.
Grill steaks to desired internal temperature. 2 ½ minutes, then flip. 2 ½ minutes, then flip. Cook additional 3 minutes.
Set aside and keep warm.
Reduce heat to 350°F/177°C. (See ingredient list below for sauce.) Set a cast iron skillet or Dutch oven on the grid and let it heat up for a few minutes. Add the butter and cook it until lightly brown, then add the mushrooms and cook until tender. Stir in leeks and garlic.
Slowly add the whiskey, it will ignite, so seriously, add it slowly! Once the whiskey burns off, stir and close the lid of the EGG. Cook until the whiskey reduces by two-thirds. Add the cream, and stir frequently for 3 to 4 minutes. The sauce will thicken up and will coat a wooden spoon, that’s when you know it’s ready! Add a little cayenne pepper and then add salt and pepper if you’d like.
Put the steaks on the grid and close the lid. Grill for about 4 minutes for medium-rare, turning once. Move the steaks to plates. Pour the sauce over the steaks and serve … they won’t last long.
How do you quickly get the temperature down from 650 to 350 degrees? That doesn’t seem to be a short process in my limited experience.
Can you just use the wire grill. Instead of the cast

I don’t understand, the video reports the steaks are done after 8 minutes. The instructions report, after cooking the steaks, make the sauce on the egg, then put the steaks back in the grill for 4 minutes, turning once. This is confusing. Which is it 8 minutes of 12 minutes?

The recipe says to grill on one side for 2 ½ minutes, then flip. Grill another 2 ½ minutes, then flip. Turn off the Grill and cook additional 3 minutes, for a total of 8 minutes. Thanks!
good video. But what doneness does your 8 min with 1″ NY Strip steaks get to. Rare? Medium? I now a lot of things can influence that, but you have specified a lot of the variables already.
I did 2.5,2.5,3 on 1.5″ steaks and they were med rare
I followed the 21/2 -21/2- 3 w/ the shutdown egg to the second ..600 to700 degrees…and 1 1/2 inch steaks were perfect medium rare internal about 135 degrees to 140. Using thinner steaks, 1 inch hick ( I shave all 3 timing zones 30 to 45 seconds but it is better to just buy the thicker cuts
