Elevate your holiday table with this Smoked Bourbon Cranberry Sauce. Bursting with tart cranberries, a touch of smoky richness, and the warm depth of bourbon, this sauce adds a bold and sophisticated twist to any feast.
Ingredients
- 12 oz. fresh cranberries (about 3 cups)
- 1 medium golden apple, peeled, cored, and diced
- 1 medium orange, zested and juiced
- 1/2 C pineapple tidbits (fresh or canned, drained if using canned)
- 1/2 C water
- 1/2 C bourbon
- 1/4 C granulated sugar (adjust based on your sweetness preference)
- 1/2 C brown sugar
- 1/4 C honey
- 1/2 cinnamon stick
- 1/4 tsp nutmeg

Method:
1. Light your egg and add 4 of your favorite wood chunks or 2 large handfuls of wood chips. I use a mix of cherry and pecan.
2. Rinse the cranberries and discard any soft or damaged ones.
3. Combine ingredients in a cast iron skillet combine the cranberries, diced apple, orange zest, orange juice, water, pineapple, bourbon, sugars, and spices. Stir well.
4. Place or your grate and bring the mixture to a simmer, stirring occasionally to dissolve the sugar.
5. Simmer for approximately 20 minutes, stirring occasionally, until cranberries burst, the apples soften, and the sauce thickens to your desired consistency.
6. Taste and adjust the sweetness or spices if needed. Remove the cinnamon stick.

You can also simmer longer for a thicker consistency. Please note that It will get thicker as it cools.
