- 1 Pork Belly, 10 lbs
- 1/4 C Ginger, grated
- 1/4 C Garlic, grated
- 1/4 C Brown Sugar
- 1/4 C Chinese Seasoning (Five Spice, White Pepper, Ginger Powder, Celery, Salt, Paprika)
- 1/4 C Green Seasoning (Cilantro, Scallion, Garlic, Scotch Bonnet)
- 2 tsp Salt
- 1 Tbsp Soy Sauce
- 1/4 C White Distilled Vinegar

1. Clean and prepare Pork Belly
2. Season with all ingredients
3. Using a fork, make small holes all over Pork Belly
4. Roll into a log and tie with twine
5. Place on a Roast Rack and baste with White Vinegar and Salt mixture
6. Refrigerate overnight, uncovered
7. Bake at 350F until an internal temperature of 170F is reached
8. Cool, slice and serve with your favorite dipping sauce
