- 6 eggs
- 2 potatoes, diced
- 1 onion, chopped
- 2 tbsp olive oil
- 1/2 tsp paprika
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
Method: Indirect baking
- Preheat the EGG to 350°F/177°C with a baking stone.
- Sauté potatoes and onions in olive oil until tender.
- Whisk eggs with paprika, salt, and pepper.
- Combine with potatoes and pour into a greased cast-iron skillet.
- Bake for 20-25 minutes until set. Garnish with parsley.
