Spanish Frittata

Ingredients

  • 6 eggs
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

Method: Indirect baking

  1. Preheat the EGG to 350°F/177°C with a baking stone.
  2. Sauté potatoes and onions in olive oil until tender.
  3. Whisk eggs with paprika, salt, and pepper.
  4. Combine with potatoes and pour into a greased cast-iron skillet.
  5. Bake for 20-25 minutes until set. Garnish with parsley.
