Smoked Chicken Sandwich with Chipotle Mayonnaise

Ingredients

  • 2 boneless chicken breasts
  • 1 tbsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup mayonnaise
  • 1 tbsp chipotle peppers in adobo, minced
  • 4 sandwich buns
  • Lettuce and tomato slices

Instructions

Method: Indirect smoking

  1. Set the EGG for indirect cooking at 250°F/121°C.
  2. Season chicken with paprika, salt, and pepper.
  3. Smoke for 2 hours or until internal temp reaches 165°F.
  4. Mix chipotle peppers with mayonnaise.
  5. Assemble sandwiches with chicken, chipotle mayo, lettuce, and tomato.
