Smoked Bologna

Ingredients

  • 1 whole bologna chub
  • 2 tbsp yellow mustard
  • 1 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/2 cup barbecue sauce

Instructions

Method: Smoking

  1. Set the EGG for indirect cooking at 250°F/121°C.
  2. Score the bologna chub with a knife and coat with mustard.
  3. Mix brown sugar, paprika, garlic powder, and pepper, then rub all over.
  4. Smoke for 3 hours, brushing with barbecue sauce in the last 30 minutes.
  5. Slice and serve on sandwiches or as a snack.
