Salt Seared Lamb Chop with Fresh Mint Sauce

Ingredients

  • 4 lamb chops
  • 1 tbsp kosher salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup fresh mint leaves
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • 1 tbsp Dijon mustard

Instructions

Method: Direct grilling

  1. Set the EGG for direct cooking at 450°F/232°C.
  2. Rub lamb chops with salt, pepper, and olive oil.
  3. Grill for 3-4 minutes per side until medium-rare (135°F internal temp).
  4. Blend mint, honey, lemon juice, and Dijon mustard to create the sauce.
  5. Serve lamb chops drizzled with fresh mint sauce.
