Pound Cake with Strawberries and Berry Coulis

Smoking Egg

Ingredients

  • 1 loaf of pound cake, sliced
  • 1 pint fresh strawberries, sliced
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (blueberries, raspberries, etc.)
  • 1/4 cup water
  • 1 tablespoon lemon juice

Instructions

Serves: 6 to 8

Method: Direct grilling and stovetop cooking

  1. Set the EGG for direct cooking at 350°F/177°C.
  2. In a medium saucepan, combine the mixed berries, 1/4 cup sugar, water, and lemon juice. Cook over medium heat until the berries break down and the sauce thickens, about 10 minutes. Set aside to cool.
  3. Toss the sliced strawberries with the remaining 1/4 cup sugar and vanilla extract. Let sit for 10 minutes.
  4. Place the pound cake slices on the EGG and grill for 1-2 minutes per side, until lightly toasted.
  5. To serve, place a slice of grilled pound cake on a plate, top with macerated strawberries, and drizzle with berry coulis. Enjoy!
