Ingredients
- 1 loaf of pound cake, sliced
- 1 pint fresh strawberries, sliced
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup mixed berries (blueberries, raspberries, etc.)
- 1/4 cup water
- 1 tablespoon lemon juice

Method: Direct grilling and stovetop cooking
- Set the EGG for direct cooking at 350°F/177°C.
- In a medium saucepan, combine the mixed berries, 1/4 cup sugar, water, and lemon juice. Cook over medium heat until the berries break down and the sauce thickens, about 10 minutes. Set aside to cool.
- Toss the sliced strawberries with the remaining 1/4 cup sugar and vanilla extract. Let sit for 10 minutes.
- Place the pound cake slices on the EGG and grill for 1-2 minutes per side, until lightly toasted.
- To serve, place a slice of grilled pound cake on a plate, top with macerated strawberries, and drizzle with berry coulis. Enjoy!
