Peach and Blueberry Summer Pie

Ingredients

  • 2 cups fresh peaches, sliced
  • 1 cup fresh blueberries
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon juice
  • 1 pre-made pie crust
  • 1 egg, beaten (for egg wash)

Instructions

Method: Indirect baking

  1. Set the EGG for indirect cooking at 375°F/191°C.
  2. Mix peaches, blueberries, sugar, cornstarch, and lemon juice.
  3. Pour mixture into the pie crust.
  4. Brush crust with egg wash and bake for 40-45 minutes.
  5. Let cool before serving.
