Ingredients
- 2 acorn squash, halved and seeded
- 1 lb ground beef
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for roasting
Instructions
Method: Roasting and sautéing
- Preheat the oven to 375°F (190°C).
- Drizzle olive oil over the acorn squash halves and season with salt and pepper.
- Place the squash cut side down on a baking sheet and roast for 40-45 minutes until tender.
- While the squash is roasting, sauté the ground beef, onion, and garlic in a skillet over medium heat until browned.
- Add cumin, chili powder, salt, and pepper to the beef mixture. Stir to combine.
- Once the squash is cooked, fill each half with the seasoned ground beef mixture and serve warm.
