Ground Beef and Acorn Squash

Smoking Egg

Ingredients

  • 2 acorn squash, halved and seeded
  • 1 lb ground beef
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Olive oil for roasting

Instructions

Method: Roasting and sautéing

  1. Preheat the oven to 375°F (190°C).
  2. Drizzle olive oil over the acorn squash halves and season with salt and pepper.
  3. Place the squash cut side down on a baking sheet and roast for 40-45 minutes until tender.
  4. While the squash is roasting, sauté the ground beef, onion, and garlic in a skillet over medium heat until browned.
  5. Add cumin, chili powder, salt, and pepper to the beef mixture. Stir to combine.
  6. Once the squash is cooked, fill each half with the seasoned ground beef mixture and serve warm.
