Grilled Mahi Mahi with Roasted Yellow Pepper Coulis

Ingredients

  • 2 Mahi Mahi fillets
  • 1 yellow bell pepper
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

Method: Direct grilling

  1. Set the EGG for direct grilling at 400°F/204°C.
  2. Roast the yellow bell pepper until skin is charred, then peel and blend with lemon juice and salt.
  3. Brush Mahi Mahi fillets with olive oil and season with garlic powder, salt, and pepper.
  4. Grill fillets for 4-5 minutes per side.
  5. Serve with yellow pepper coulis drizzled over the top.
