Dr. BBQ's Spare Rib Surprise

Smoking Egg

Ingredients

  • 2 racks pork spare ribs
  • 1/4 cup yellow mustard
  • 1/2 cup brown sugar
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 cup apple juice
  • 1/2 cup barbecue sauce

Instructions

Method: Indirect smoking

  1. Set the EGG for indirect cooking at 275°F/135°C.
  2. Rub ribs with mustard, then coat with brown sugar and seasonings.
  3. Smoke for 3 hours.
  4. Wrap ribs in foil with apple juice and cook for 2 more hours.
  5. Unwrap, brush with barbecue sauce, and cook for 1 more hour.
  6. Rest for 10 minutes before slicing.
