Chili Crusted Boar Ham

Smoking Egg

Ingredients

  • 4 lb wild boar ham
  • 2 tbsp chili powder
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 cup apple cider vinegar

Instructions

Method: Low and slow smoking

  1. Set the EGG for indirect cooking at 275°F/135°C.
  2. Mix chili powder, brown sugar, garlic powder, salt, and pepper.
  3. Rub mixture onto boar ham.
  4. Smoke for 4-5 hours, basting with apple cider vinegar every hour.
  5. Let rest for 20 minutes before slicing.
