Ingredients
- 2 chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 tbsp fajita seasoning
- 1 cup rice
- 1 cup pineapple, chopped
- 1/2 cup black beans, drained
- 1/4 cup cilantro, chopped
Instructions
Method: Grilling
- Grill chicken and vegetables with fajita seasoning until cooked through.
- Cook rice according to package instructions.
- In a separate bowl, combine pineapple, black beans, and cilantro to make salsa.
- Assemble bowls with rice, grilled chicken, vegetables, and salsa.
