Instructions

Accessories/Equipment:

Cast Iron

Method:

1. Preheat the Big Green Egg to 275 & add a chunk of cherry smoking wood

2. Slice bread into bite size pieces, toss in olive oil & your favorite rub

3. Place bread cubes on the Egg to toast them into croutons

4. Once toasted remove from the Egg and set aside

5. Place your Big Green Egg cast iron on the egg and bring up to temp

6. Chop the bacon & put it in the cast iron skillet with the raw sausage. Sauté until cooked through & set aside

7. Sauté garlic, onions, apple & celery in the bacon grease

8. Mix the croutons, bacon, sausage, and vegetables in a container to ensure that they are evenly distributed and add them back into the cast iron

9. Top the mixture with fresh herbs and your favorite barbecue rub & place back on the egg for about 30 minutes or until the top has a nice crispy layer.

Big Green Egg Tip:

We used Sourdough and Hawaiian Sweet Rolls for this recipe, but use whichever bread your family prefers. For the sausage, breakfast sausage is also delicious in this recipe.
