How to Set Up for Roasting

Getting Started

Roasting on the Big Green Egg offers rich flavors and juicy results by creating a convection oven effect. If your cook is likely to take longer than 20 minutes and will need a cooking temperature of 400˚F or less, roasting is probably the cooking mode for you. Here’s how to set up your Egg for the perfect roast.

Preheat to the Right Temperature 

Load and light your Egg. For most roasts, aim for 300°F-400°F. This ensures even cooking with a golden exterior.

Indirect Cooking Setup

Use the convEGGtor for indirect heat, which prevents burning and keeps food juicy. Once the ceramics are warmed up and you are close to your recipe's target temperature, insert your ConvEGGtor onto the Fire Ring, place the Stainless Steel Grid on top and close the lid.

Adjust the Temperature

When you are 50˚F from your target temperature, adjust your rEGGulator and Draft Door by half then in 1cm increments until the temperature stops fluctuating. After about 10 minutes, you'll be ready for a roast.

Choose Your Tools

The right accessories—and when you use them—can make all the difference in roasting. If you want to capture those flavorful juices, consider adding a Drip Pan, but wait until midway through cooking to avoid burning. For more flavor, add stock or wine to the pan at the start.

For evenly crisp skin or a nice crust, use a Vertical Roaster or Roasting Rack to elevate your meat. Avoid foil; the Eggs design seals in moisture and flavor naturally, while foil can prevent crisping.
