How to Set Up for Low & Slow

Getting Started

Slow-cooking on the Big Green Egg creates tender, flavorful meats that fall off the bone. This cooking method requires a lot of patience but very little effort on the Big Green Egg. That said, there are a few things to consider to ensure you end with fall off the bone flavor.

Target Temperature  

Because every cut is different, timing your cook often leads to inconsistent results. Recipes should serve as a guide but it's only by checking internal temperatures with a thermometer that you'll be able to get it right every time. Once you achieve your target temperature, it’s important to let your meat rest. Our Butcher's Paper will help.

Use the convEGGtor 

Once the thermometer is reading 50˚F below your target temperature, add in your ConvEGGtor and Stainless Steel Grid for indirect heat, which protects your food from direct flames and provides even cooking, essential for long cooking times. When you get to 50˚F below your target temperature again, adjust your vents in tandem until your target temperature is sustained.

Patience Is a Virtue 

Controlling the temperature can take a little practice. As the Egg has excellent heat retention, it's always easier to bring the temperature up than down, so the trick is to adjust the vents in small increments when you put your surfaces in. Once set, don't be tempted to move your charcoal around. This will cause the heat to rise unpredictably. Instead, put your food in and leave the Egg alone.
