Wickles Potato Salad

Smoking Egg

Ingredients

  • 2 lbs potatoes, peeled and diced
  • 1 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1/4 cup pickle relish
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • Salt and pepper to taste
  • 2 boiled eggs, chopped (optional)

Instructions

Method: Mixing

  1. Boil the diced potatoes until tender, about 10-12 minutes. Drain and let cool.
  2. In a bowl, mix together mayonnaise, Dijon mustard, and pickle relish.
  3. Stir in chopped celery, onion, and boiled eggs if using.
  4. Add the cooled potatoes to the bowl and mix gently to coat. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least an hour before serving.
