Ingredients
- 2 lbs potatoes, peeled and diced
- 1 cup mayonnaise
- 2 tbsp Dijon mustard
- 1/4 cup pickle relish
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- Salt and pepper to taste
- 2 boiled eggs, chopped (optional)
Instructions
Method: Mixing
- Boil the diced potatoes until tender, about 10-12 minutes. Drain and let cool.
- In a bowl, mix together mayonnaise, Dijon mustard, and pickle relish.
- Stir in chopped celery, onion, and boiled eggs if using.
- Add the cooled potatoes to the bowl and mix gently to coat. Season with salt and pepper to taste.
- Chill in the refrigerator for at least an hour before serving.
