Southwest Baked Oysters

Smoking Egg

Ingredients

  • 24 fresh oysters, shucked
  • 1/2 cup unsalted butter, melted
  • 2 tbsp garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste

Instructions

Method: Grilling

  1. Preheat your grill to medium-high heat.
  2. In a bowl, mix butter, garlic, Parmesan, breadcrumbs, parsley, lemon juice, cayenne pepper, salt, and pepper.
  3. Top each oyster with a spoonful of the butter mixture.
  4. Place oysters on the grill, directly over the heat, and cook for 6-8 minutes, or until the topping is golden brown.
  5. Serve immediately with extra lemon wedges on the side.
