Southern Catfish

Smoking Egg

Ingredients

  • 4 catfish fillets
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp cayenne pepper
  • 1/2 cup buttermilk
  • 2 tbsp hot sauce
  • 1/2 cup vegetable oil for frying

Instructions

Method: Frying

  1. Set the EGG for indirect cooking at 375°F/191°C.
  2. Mix cornmeal, flour, salt, pepper, garlic powder, paprika, and cayenne.
  3. In another bowl, mix buttermilk and hot sauce.
  4. Dip catfish fillets in buttermilk, then dredge in cornmeal mixture.
  5. Heat oil in a skillet and fry catfish for 3-4 minutes per side.
  6. Drain on paper towels and serve warm.
