Smoking Egg

Ingredients

  • 1 (5-6 lb) prime rib roast
  • 2 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 2 tbsp unsalted butter, melted

Instructions

Method: Indirect roasting

  1. Set the EGG for indirect cooking at 250°F/121°C.
  2. Rub roast with salt, pepper, garlic powder, rosemary, and thyme.
  3. Place on the grill and cook until internal temp reaches 125°F (medium-rare), about 3 hours.
  4. Increase heat to 450°F/232°C and sear for 10 minutes.
  5. Remove from grill, let rest for 20 minutes, then slice and serve.
