Ingredients

  • 4 filet mignon steaks
  • 2 tbsp olive oil
  • 1 tbsp ancho chile powder
  • 1 tsp espresso powder
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter

Instructions

Method: Cast iron searing

  1. Set the EGG for direct cooking at 450°F/232°C.
  2. Rub steaks with olive oil, ancho chile powder, espresso powder, garlic powder, salt, and pepper.
  3. Heat a cast iron skillet and melt butter.
  4. Sear steaks for 3-4 minutes per side until medium-rare.
  5. Remove from heat and let rest for 5 minutes.
  6. Serve with a drizzle of pan juices.
