Pumpkin Meatloaf with Pumpkin BBQ Sauce

Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/2 cup canned pumpkin puree
  • 1 egg
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • Salt and pepper to taste
  • 1/2 cup pumpkin BBQ sauce (store-bought or homemade)

Instructions

Method: Baking

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, pumpkin puree, egg, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into a loaf and place it on a baking sheet lined with parchment paper.
  4. Bake the meatloaf for 45 minutes, then brush with pumpkin BBQ sauce.
  5. Bake for an additional 10 minutes, then remove from the oven and let rest before slicing.
  6. Serve with mashed potatoes or roasted vegetables.
