- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/2 cup canned pumpkin puree
- 1 egg
- 1 tbsp garlic powder
- 1 tbsp onion powder
- Salt and pepper to taste
- 1/2 cup pumpkin BBQ sauce (store-bought or homemade)
Instructions
Method: Baking
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, pumpkin puree, egg, garlic powder, onion powder, salt, and pepper.
- Form the mixture into a loaf and place it on a baking sheet lined with parchment paper.
- Bake the meatloaf for 45 minutes, then brush with pumpkin BBQ sauce.
- Bake for an additional 10 minutes, then remove from the oven and let rest before slicing.
- Serve with mashed potatoes or roasted vegetables.
