Plank Grilled Chicken with Fruit Salsa

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cedar plank, soaked in water for 1 hour
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup diced pineapple
  • 1/2 cup diced mango
  • 1/4 cup red onion, finely chopped
  • 1 tbsp lime juice
  • 1 tbsp fresh cilantro, chopped

Instructions

Method: Indirect grilling

  1. Set the EGG for indirect cooking at 350°F/177°C.
  2. Brush chicken with olive oil and season with salt and pepper.
  3. Place chicken on the soaked cedar plank and grill for 20-25 minutes.
  4. Mix pineapple, mango, onion, lime juice, and cilantro for the salsa.
  5. Top grilled chicken with salsa before serving.
