Ingredients
- 2 boneless, skinless chicken breasts
- 1 cedar plank, soaked in water for 1 hour
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup diced pineapple
- 1/2 cup diced mango
- 1/4 cup red onion, finely chopped
- 1 tbsp lime juice
- 1 tbsp fresh cilantro, chopped
Instructions
Method: Indirect grilling
- Set the EGG for indirect cooking at 350°F/177°C.
- Brush chicken with olive oil and season with salt and pepper.
- Place chicken on the soaked cedar plank and grill for 20-25 minutes.
- Mix pineapple, mango, onion, lime juice, and cilantro for the salsa.
- Top grilled chicken with salsa before serving.
