Smoking Egg

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/4 cup Irish cream liqueur (like Baileys)
  • 1/4 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup chocolate chips (optional)

Instructions

Method: Baking

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and eggs together until light and fluffy. Add Irish cream liqueur, buttermilk, and vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing until smooth. Fold in chocolate chips if desired.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let them cool completely before serving.
