Indian Curry Summer Vegetables

Smoking Egg

Ingredients

  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 yellow squash, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp curry powder
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • Salt & black pepper to taste
  • 1/4 cup fresh cilantro, chopped

Instructions

Method: Direct grilling

  1. Set the EGG for direct cooking at 375°F/191°C.
  2. Toss all vegetables with olive oil and seasonings.
  3. Grill in a perforated pan for 8-10 minutes, stirring occasionally.
  4. Garnish with fresh cilantro and serve warm.
