Herb-Wrapped Beef Tenderloin

Smoking Egg

Ingredients

  • 1 beef tenderloin (about 3-4 lbs)
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Butcher's twine

Instructions

Method: Roasting

  1. Preheat the oven to 400°F (200°C).
  2. Combine rosemary, thyme, garlic, and olive oil in a bowl.
  3. Season the beef tenderloin with salt and pepper, then rub the herb mixture all over the beef.
  4. Tie the tenderloin with butcher's twine to hold its shape.
  5. Roast in the preheated oven for 35-40 minutes, or until the desired doneness is achieved.
  6. Let the beef rest for 10 minutes before slicing and serving.
