- 1 beef tenderloin (about 3-4 lbs)
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 3 cloves garlic, minced
- 1/4 cup olive oil
- Salt and pepper to taste
- Butcher's twine
Instructions
Method: Roasting
- Preheat the oven to 400°F (200°C).
- Combine rosemary, thyme, garlic, and olive oil in a bowl.
- Season the beef tenderloin with salt and pepper, then rub the herb mixture all over the beef.
- Tie the tenderloin with butcher's twine to hold its shape.
- Roast in the preheated oven for 35-40 minutes, or until the desired doneness is achieved.
- Let the beef rest for 10 minutes before slicing and serving.
