Hatch Chile Grilled Quesadilla

Smoking Egg

Ingredients

  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup roasted Hatch chiles, chopped
  • 1/2 cup grilled onions, sliced
  • 1/2 cup cooked chicken, shredded
  • 2 tbsp butter

Instructions

Method: Direct grilling

  1. Set the EGG for direct cooking at 375°F/191°C.
  2. Heat a griddle or cast iron skillet on the EGG.
  3. Butter one side of each tortilla.
  4. Layer cheese, chiles, onions, and chicken onto half of each tortilla.
  5. Fold over and grill for 2-3 minutes per side until golden and cheese is melted.
  6. Remove from heat, slice, and serve.
