Grouper with Pineapple Salsa

Smoking Egg

Ingredients

  • 4 grouper fillets
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup diced pineapple
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1 tbsp lime juice
  • 1 tbsp chopped cilantro

Instructions

Method: Direct grilling

  1. Set the EGG for direct cooking at 400°F/204°C.
  2. Rub grouper fillets with olive oil, salt, and pepper.
  3. Grill for 3-4 minutes per side.
  4. Mix pineapple, bell pepper, onion, lime juice, and cilantro to make salsa.
  5. Serve salsa over grilled grouper.
