Grilled Root Vegetable Salad with Bacon and Chives

Smoking Egg

Ingredients

  • 2 medium carrots, peeled and cut into rounds
  • 2 medium parsnips, peeled and cut into rounds
  • 1 small sweet potato, peeled and cut into cubes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 slices bacon, cooked and crumbled
  • 2 tbsp fresh chives, chopped
  • 2 tbsp balsamic vinaigrette

Instructions

Method: Grilling

  1. Preheat the grill to medium heat.
  2. Toss carrots, parsnips, and sweet potato in olive oil, salt, and pepper.
  3. Grill the vegetables in a grill basket or on skewers for 10-15 minutes, turning occasionally, until tender and lightly charred.
  4. Remove from the grill and toss with crumbled bacon, chopped chives, and balsamic vinaigrette.
  5. Serve warm as a side dish or main course salad.
