Ingredients
- 2 medium carrots, peeled and cut into rounds
- 2 medium parsnips, peeled and cut into rounds
- 1 small sweet potato, peeled and cut into cubes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 slices bacon, cooked and crumbled
- 2 tbsp fresh chives, chopped
- 2 tbsp balsamic vinaigrette
Instructions
Method: Grilling
- Preheat the grill to medium heat.
- Toss carrots, parsnips, and sweet potato in olive oil, salt, and pepper.
- Grill the vegetables in a grill basket or on skewers for 10-15 minutes, turning occasionally, until tender and lightly charred.
- Remove from the grill and toss with crumbled bacon, chopped chives, and balsamic vinaigrette.
- Serve warm as a side dish or main course salad.
