Grilled Mexican Cobb Salad

Ingredients

  • 1 head romaine lettuce, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (grilled or canned)
  • 1 cup cooked chicken breast, chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup crumbled queso fresco
  • 1/4 cup lime dressing

Instructions

Method: Grilling

  1. Preheat grill to medium-high heat. Grill chicken and corn, then chop the chicken and set aside.
  2. In a large bowl, mix lettuce, avocado, tomatoes, red onion, black beans, corn, chicken, cilantro, cheddar, and queso fresco.
  3. Drizzle with lime dressing and toss to combine.
  4. Serve immediately and enjoy!
