Ingredients
- 1 head romaine lettuce, chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels (grilled or canned)
- 1 cup cooked chicken breast, chopped
- 1/4 cup cilantro, chopped
- 1/4 cup shredded cheddar cheese
- 1/4 cup crumbled queso fresco
- 1/4 cup lime dressing
Instructions
Method: Grilling
- Preheat grill to medium-high heat. Grill chicken and corn, then chop the chicken and set aside.
- In a large bowl, mix lettuce, avocado, tomatoes, red onion, black beans, corn, chicken, cilantro, cheddar, and queso fresco.
- Drizzle with lime dressing and toss to combine.
- Serve immediately and enjoy!
