Grilled Baby Artichokes with Hatch Chile Dusted Hollandaise

Ingredients

  • 8 baby artichokes, trimmed and halved
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 egg yolks
  • 1 tbsp lemon juice
  • 1/2 cup melted butter
  • 1/2 tsp roasted hatch chile powder

Instructions

Method: Direct grilling

  1. Set the EGG for direct cooking at 400°F/204°C.
  2. Brush artichokes with olive oil and season with salt and pepper.
  3. Grill cut-side down for 5 minutes, then flip and cook for another 3 minutes.
  4. In a blender, mix egg yolks and lemon juice.
  5. Slowly drizzle in melted butter while blending.
