Ingredients
- 1 lb chicken breast, cubed
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1/4 cup olive oil
- 2 tbsp balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Wooden skewers (soaked in water)
Instructions
Method: Grilling
- In a bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
- Thread the chicken and vegetables onto the skewers, alternating between meat and veggies.
- Brush the kabobs with the marinade and let them sit for 10-15 minutes to soak in the flavors.
- Preheat the grill to medium-high heat. Grill the kabobs for 8-10 minutes, turning occasionally, until the chicken is fully cooked and vegetables are tender.
- Serve hot with a side of rice or a salad.
