Festive Kabobs

Smoking Egg

Ingredients

  • 1 lb chicken breast, cubed
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Wooden skewers (soaked in water)

Instructions

Method: Grilling

  1. In a bowl, whisk together olive oil, balsamic vinegar, garlic, oregano, salt, and pepper.
  2. Thread the chicken and vegetables onto the skewers, alternating between meat and veggies.
  3. Brush the kabobs with the marinade and let them sit for 10-15 minutes to soak in the flavors.
  4. Preheat the grill to medium-high heat. Grill the kabobs for 8-10 minutes, turning occasionally, until the chicken is fully cooked and vegetables are tender.
  5. Serve hot with a side of rice or a salad.
