Duck and Mango Quesadilla

Smoking Egg

Ingredients

  • 2 duck breasts, cooked and shredded
  • 1 ripe mango, diced
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 cup red onion, finely chopped
  • 4 flour tortillas
  • 1/4 cup cilantro, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

Method: Grilling or Pan-Frying

  1. In a bowl, combine shredded duck, diced mango, chopped onion, and cilantro. Season with salt and pepper.
  2. Heat a pan or grill over medium heat and lightly brush the tortillas with olive oil.
  3. Place a tortilla on the pan, add a generous portion of the duck and mango mixture, and sprinkle with cheese.
  4. Top with another tortilla and cook until golden and crispy on both sides, about 3-4 minutes per side.
  5. Remove from heat and slice into wedges. Serve with salsa or sour cream if desired.
