Ingredients
- 2 duck breasts, cooked and shredded
- 1 ripe mango, diced
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/4 cup red onion, finely chopped
- 4 flour tortillas
- 1/4 cup cilantro, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
Method: Grilling or Pan-Frying
- In a bowl, combine shredded duck, diced mango, chopped onion, and cilantro. Season with salt and pepper.
- Heat a pan or grill over medium heat and lightly brush the tortillas with olive oil.
- Place a tortilla on the pan, add a generous portion of the duck and mango mixture, and sprinkle with cheese.
- Top with another tortilla and cook until golden and crispy on both sides, about 3-4 minutes per side.
- Remove from heat and slice into wedges. Serve with salsa or sour cream if desired.
