Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 cup canned corn, drained
- 1/2 cup shredded cheddar cheese (optional)
Instructions
Method: Baking
- Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish or cast-iron skillet.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together buttermilk, eggs, and melted butter.
- Combine the wet and dry ingredients and mix until just combined.
- Stir in the canned corn and cheese, if using.
- Pour the batter into the prepared dish and bake for 25-30 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let cool slightly before serving.
