Smoking Egg

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 cup canned corn, drained
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

Method: Baking

  1. Preheat the oven to 375°F (190°C). Grease a 9x9-inch baking dish or cast-iron skillet.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together buttermilk, eggs, and melted butter.
  4. Combine the wet and dry ingredients and mix until just combined.
  5. Stir in the canned corn and cheese, if using.
  6. Pour the batter into the prepared dish and bake for 25-30 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Let cool slightly before serving.
