Double Chocolate Cupcakes with Lentils

Ingredients

  • 1 cup cooked lentils, pureed
  • 1 cup flour
  • 1/2 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup chocolate chips

Instructions

Method: Baking

  1. Preheat the oven to 350°F/175°C and line a muffin tin with paper liners.
  2. Mix flour, cocoa powder, baking soda, salt, and sugar in a bowl.
  3. In another bowl, whisk together pureed lentils, eggs, oil, vanilla extract, and milk.
  4. Combine both mixtures and stir in chocolate chips.
  5. Fill cupcake liners with batter and bake for 18-20 minutes, until a toothpick comes out clean.
