Ingredients
- 1 cup cooked lentils, pureed
- 1 cup flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup sugar
- 2 eggs
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup chocolate chips
Instructions
Method: Baking
- Preheat the oven to 350°F/175°C and line a muffin tin with paper liners.
- Mix flour, cocoa powder, baking soda, salt, and sugar in a bowl.
- In another bowl, whisk together pureed lentils, eggs, oil, vanilla extract, and milk.
- Combine both mixtures and stir in chocolate chips.
- Fill cupcake liners with batter and bake for 18-20 minutes, until a toothpick comes out clean.
