Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 2 tbsp chopped chives (for garnish)
Instructions
Method: Boiling and smoking
- Set the EGG for indirect cooking at 250°F/121°C.
- Place eggs in a pan with water and bring to a boil. Let boil for 10 minutes.
- Transfer eggs to an ice bath and let cool for 5 minutes.
- Peel eggs, cut in half, and remove yolks.
- In a bowl, mix yolks, mayo, mustard, vinegar, salt, and pepper.
- Pipe mixture back into egg whites.
- Smoke eggs on the EGG for 15 minutes.
- Garnish with paprika and chives before serving.
