Cider-Brined Pork Chops

Smoking Egg

Ingredients

  • 4 bone-in pork chops
  • 1 cup apple cider
  • 1/4 cup brown sugar
  • 1/4 cup salt
  • 2 tbsp whole grain mustard
  • 1 tsp black peppercorns
  • 2 cloves garlic, crushed
  • 1 tsp thyme

Instructions

Method: Grilling or Baking

  1. In a saucepan, combine apple cider, brown sugar, salt, mustard, peppercorns, garlic, and thyme. Bring to a boil, then reduce heat and simmer for 5-7 minutes.
  2. Remove from heat and let the brine cool to room temperature.
  3. Submerge the pork chops in the brine and refrigerate for 1-2 hours.
  4. Preheat the grill to medium-high heat. Grill the pork chops for 6-7 minutes per side, or until they reach an internal temperature of 145°F (63°C).
  5. Let the pork chops rest for 5 minutes before serving.
