Ingredients
- 4 bone-in pork chops
- 1 cup apple cider
- 1/4 cup brown sugar
- 1/4 cup salt
- 2 tbsp whole grain mustard
- 1 tsp black peppercorns
- 2 cloves garlic, crushed
- 1 tsp thyme
Instructions
Method: Grilling or Baking
- In a saucepan, combine apple cider, brown sugar, salt, mustard, peppercorns, garlic, and thyme. Bring to a boil, then reduce heat and simmer for 5-7 minutes.
- Remove from heat and let the brine cool to room temperature.
- Submerge the pork chops in the brine and refrigerate for 1-2 hours.
- Preheat the grill to medium-high heat. Grill the pork chops for 6-7 minutes per side, or until they reach an internal temperature of 145°F (63°C).
- Let the pork chops rest for 5 minutes before serving.
