Cedar-Planked Cherry Tomatoes

Ingredients

  • 1 pint cherry tomatoes
  • 1 cedar plank (soaked in water for at least 1 hour)
  • 2 tbsp olive oil
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

Method: Indirect grilling

  1. Set the EGG for indirect cooking at 400°F/204°C.
  2. Toss cherry tomatoes with olive oil, salt, and pepper.
  3. Place the tomatoes on the soaked cedar plank.
  4. Grill for 10-15 minutes until tomatoes start to burst.
  5. Remove from heat, top with Parmesan and fresh basil.
  6. Serve warm as a side dish or topping for grilled meats.
