- 1 1/2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 eggs
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 1/2 cups grated carrots
- 1/4 cup chopped walnuts
Instructions
Method: Baking
- Preheat oven to 350°F/175°C and line a muffin tin with paper liners.
- Mix flour, baking powder, baking soda, salt, and cinnamon in a bowl.
- In another bowl, whisk together eggs, sugar, oil, and vanilla extract.
- Fold in grated carrots and walnuts.
- Fill cupcake liners with batter and bake for 18-20 minutes, until a toothpick comes out clean.
