Carrot Cupcakes

Ingredients

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 1/2 cups grated carrots
  • 1/4 cup chopped walnuts

Instructions

Method: Baking

  1. Preheat oven to 350°F/175°C and line a muffin tin with paper liners.
  2. Mix flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. In another bowl, whisk together eggs, sugar, oil, and vanilla extract.
  4. Fold in grated carrots and walnuts.
  5. Fill cupcake liners with batter and bake for 18-20 minutes, until a toothpick comes out clean.
