Cardamom Fennel Scallops

Smoking Egg

Ingredients

  • 8 large sea scallops
  • 1 tbsp olive oil
  • 1/2 tsp cardamom powder
  • 1/2 tsp fennel seeds, crushed
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp butter

Instructions

Method: Direct grilling

  1. Set the EGG for direct grilling at 450°F/232°C.
  2. Pat scallops dry and season with cardamom, fennel, salt, and pepper.
  3. Heat olive oil on a griddle and sear scallops for 2 minutes per side.
  4. Finish with butter and serve hot.
